Preparation Steps

Freeze tiny dollops of 100 g Biscoff spread until firm, then keep them frozen as chips for the batter.

Preheat the oven to 180°C / 350°F. Grease or line a small cake pan.

Whisk 50 g caster sugar, 25 g brown sugar, 40 g melted butter, and 20 g Biscoff spread until smooth.

Add 90 g all-purpose flour, 1/2 tsp baking powder, 1/4 tsp baking soda, and 1/4 tsp ground cinnamon to the bowl.

Fold the dry ingredients into the mixture, alternating additions with 140 ml buttermilk and 1/2 tsp vanilla extract.

Fold in the crushed Biscoff biscuits and 100 g frozen Biscoff spread chips just until evenly distributed.

Transfer the batter to the prepared cake pan. Smooth the surface gently.

Bake at 180°C / 350°F for 35 to 40 minutes. Check doneness with a skewer; it should come out clean from the cake center.
