Preparation Steps
Step 1/13
Finely chop the rosemary, sage, garlic cloves, and bay leaves.
Step 2/13
Combine the chopped herbs, garlic, bay leaves, ground black pepper, salt, and extra-virgin olive oil in a mixing bowl.

Lay the pork belly skin-side down on a cutting board and flatten the meat side lightly with a meat mallet.
Step 4/13
Rub the herb seasoning mixture evenly over the meat side of the pork belly.
Step 5/13
Place the pork loin along the center of the seasoned pork belly and roll the belly tightly around it.

Tie the rolled porchetta securely with kitchen twine at 3 to 4 cm intervals.

Refrigerate the tied porchetta for about 120 min to marinate.

Preheat the oven to 220°C / 425°F and place the porchetta in a roasting pan.

Cover the roasting pan tightly with aluminum foil and roast the porchetta for 180 min at 220°C / 425°F.
Step 10/13
Remove the aluminum foil and increase the oven temperature to 230°C / 445°F.
Step 11/13
Roast uncovered for 120 min at 230°C / 445°F until the skin is deeply browned and crackling.
Step 12/13
Check that the center of the pork loin reaches at least 63°C / 145°F, then remove the porchetta from the oven.
Step 13/13
Rest the porchetta for 20 min before removing the kitchen twine and slicing it.
