Preparation Steps
Step 1/13
Preheat the oven to 200°C / 400°F.

Finely chop the 2 garlic cloves, 1/2 chili pepper, and 2 tbsp fresh parsley.

Combine the chopped garlic, chili, parsley, 1 bay leaf, 1 tsp ground ginger, 1 tsp salt, and 1 tsp black pepper in a mixing bowl.

Coat the 4 boneless chicken thighs thoroughly with the marinade.

Marinate the chicken for 15 minutes at room temperature.

Slice the red, green, and yellow bell peppers and the yellow onion into thin strips.

Mix 3 tbsp mayonnaise, 1 tsp mustard, 1 tsp paprika, 1 tsp salt, and 1 tsp black pepper in a clean bowl.

Arrange the marinated chicken thighs in the baking dish and scatter the sliced peppers and onion around them.

Spread the mayonnaise mixture over the chicken and vegetables.

Bake for 30 to 35 minutes until the chicken reaches 74°C / 165°F internally and the vegetables are tender.

Peel the 4 plantains and cut them into thick diagonal pieces.

Add the plantain pieces to the baking dish for the final 20 minutes of cooking, turning them once if possible.

Remove the bay leaf and serve the baked chicken mayo hot with peppers, onions, and plantains.
