Preparation Steps
Step 1/17
Rinse 500 g basmati rice until the water runs mostly clear, then soak it in water for 20 minutes.

Heat 1 cup cooking oil in a frying pan and fry the 4 chopped onions until deep golden brown.
Step 3/17
Remove the fried onion with a slotted spoon and divide it into two equal portions for the kebabs and pulao.

Add 500 g chicken mince, 2 green chillies, 1 tsp red chilli powder, half the fried onion, 1/2 tsp garam masala powder, 1 tbsp ginger garlic paste, 1 tsp cumin powder, 1/2 tsp salt and 2 tbsp seekh kebab masala to the food chopper.

Process the kebab mixture until finely combined and shape it into 10 to 12 small seekh kebabs.

Fry the shaped seekh kebabs in hot cooking oil over medium heat until browned and cooked through, about 8 to 10 minutes.

Transfer the cooked seekh kebabs to a serving platter and keep them aside.

Heat the remaining 1/2 cup cooking oil in a large pot and fry 1 tsp ginger garlic paste over medium heat for 30 seconds.

Add 4 green cardamom pods, 4 cloves, 10 black peppercorns, 1 black cardamom pod, 1 bay leaf, 2 cinnamon sticks and 1 tsp cumin seeds; stir for 30 seconds until fragrant.

Stir the remaining half of the fried onion into the spiced oil, then reduce the heat to low.

Add 1/2 cup plain yogurt and stir continuously until it is smooth and lightly sizzling.

Add 2 tsp salt, 500 ml chicken stock and 500 ml water; bring the liquid to a rolling boil.

Drain the soaked basmati rice and add it to the boiling stock, then stir gently once to distribute the rice.
Step 14/17
Cook the rice uncovered on high heat until the liquid has nearly evaporated and small steam holes appear on the surface, about 8 to 10 minutes.

Cover the pot tightly and steam the pulao on very low heat for 15 minutes, then rest it covered for 5 minutes.

Fluff the pulao gently and arrange the fried seekh kebabs over the rice.
Step 17/17
Garnish with reserved fried onion and serve hot with raita and salad if desired.
