Preparation Steps
Step 1/7
Peel and finely chop the onion. Peel the potatoes and cut them into medium chunks.
Step 2/7
Cut the beef shoulder into bite-size cubes. Cut the half preserved lemon into small pieces, discarding seeds.
Step 3/7
Place the beef, chopped onion, salt, black pepper, turmeric, paprika, garlic powder, cumin, ground ginger, and ras el hanout in a large pot. Stir well to coat the beef with the spices.

Add 600 ml water and the chopped preserved lemon to the pot. Bring the stew to a boil over medium-high heat.

Cover the pot and simmer the beef over low heat for 60 minutes. Stir occasionally and add a little water only if the stew becomes too dry.

Add the potato chunks and chickpeas to the pot. Stir them into the cooking liquid.
Step 7/7
Cover and simmer for 25 to 30 minutes, until the potatoes are tender and the beef is fork-tender. Taste and adjust salt and pepper before serving hot.
