Step 3/22
Add 1 tablespoon of cumin seeds and 6 to 7 saffron strands. Fry for 20 to 30 seconds until fragrant.
Step 4/22
Add the rinsed samak rice and stir it gently for 1 minute to coat it in the fragrant ghee.
Step 5/22
Pour in 6 cups of water and bring the rice to a boil.
Step 6/22
Cover the handi and simmer the rice for 15 to 18 minutes until tender and the water is absorbed.
Step 7/22
Fluff the cooked samak rice gently and transfer it to a bowl.
Step 8/22
Heat the remaining 1 tablespoon of ghee in the handi over medium heat.
Step 9/22
Add 1.5 teaspoons of cumin seeds and 1 tablespoon of grated ginger. Sautรฉ for 30 seconds until aromatic.
Step 10/22
Add 200 g of paneer and sautรฉ gently for 2 to 3 minutes.
Step 11/22
Whisk 3 cups of plain yogurt until smooth, then lower the heat.
Step 12/22
Stir the whisked yogurt into the handi slowly. Cook for 4 to 5 minutes while stirring to prevent curdling.
Step 13/22
Add 1 teaspoon of ground turmeric, 1 tablespoon of red chili powder, 1.5 teaspoons of ground cumin, and 1.5 teaspoons of ground coriander.
Step 14/22
Add chopped green chili and half of the fresh coriander. Simmer the paneer gravy for 5 minutes until thickened.
Step 15/22
Grease the inside of the handi with a little ghee.
Step 16/22
Spread half of the cooked samak rice evenly across the base of the greased handi.
Step 17/22
Blend or finely chop the remaining fresh coriander, fresh mint leaves, and green chili into a coarse herb paste.
Step 18/22
Spread the herb paste over the rice, then spoon the paneer gravy on top.
Step 19/22
Cover the paneer gravy with the remaining samak rice and level the surface gently.
Step 20/22
Cover the handi and cook on the lowest heat for 8 to 10 minutes to allow the layers to steam together.
Step 21/22
Season the biryani with salt to taste and fluff the layers lightly.
Step 22/22
Garnish with aloo salli, fresh mint leaves, and fresh coriander before serving hot.
