Preparation Steps
Step 1/18
Bring a saucepan of salted water to a boil and cook the unpeeled mashed potatoes for 20 minutes until tender.
Step 2/18
Drain the cooked potatoes and rinse them under cold water.
Step 3/18
Peel the cooled potatoes and place them in a mixing bowl.
Step 4/18
Mash the 640 g mashed potatoes with 100 g sifted potato starch, ground nutmeg, and 1/2 teaspoon salt.
Step 5/18
Knead the potato mixture with your hands until it forms a non-sticky dough ball.
Step 6/18
Divide the dough into 4 equal portions and roll each portion into a ball.
Step 7/18
Place one dough ball on plastic wrap and flatten it by hand into a disc slightly larger than one slice of smoked plant-based ham.
Step 8/18
Place 1 slice of smoked plant-based ham and 2 plant-based cheese slices in the center of the potato disc.
Step 9/18
Fold the potato disc over the filling using the plastic wrap and press the edges firmly to seal.
Step 10/18
Repeat the filling and sealing process with the remaining 3 potato dough balls.
Step 11/18
Sift 50 g potato starch onto the first plate and pour the unsweetened soy milk onto the second plate.
Step 12/18
Mix the breadcrumbs, paprika, and remaining salt on the third plate.
Step 13/18
Coat each cordon bleu lightly with potato starch on both sides, using a pastry brush or your fingers.
Step 14/18
Dip each starch-coated cordon bleu quickly in unsweetened soy milk, coating both sides.
Step 15/18
Press each cordon bleu into the seasoned breadcrumbs until both sides are fully coated.
Step 16/18
Heat the frying oil in a frying pan over medium-high heat until hot.
Step 17/18
Fry the breaded cordon bleus for about 4 to 5 minutes per side until deeply golden and crisp.
Step 18/18
Remove the fried cordon bleus from the oil and serve immediately while the filling is hot.
