Preparation Steps
Step 1/9
Preheat the oven to 425°F (220°C). Place the poblano pepper, jalapeño pepper, and shallot on a baking sheet; drizzle with olive oil.
Step 2/9
Roast the vegetables for 20 to 25 minutes, until soft and lightly charred. Let them cool until safe to handle.
Step 3/9
Peel the cooled peppers and remove their stems. Chop the roasted peppers and shallot into small pieces.
Step 4/9
Heat a skillet over medium-high heat and sauté the frozen corn for 4 to 5 minutes. Transfer 1 1/2 cups of the corn to a bowl, leaving 1/2 cup in the skillet.
Step 5/9
Add the scallion to the remaining 1/2 cup corn. Sauté for 1 minute, then remove the skillet from the heat.
Step 6/9
Add ricotta cheese, feta cheese, Greek yogurt, cumin, paprika, garlic powder, chipotle hot sauce, salt, and lime juice to a food processor. Process for 30 seconds until smooth and whipped.
Step 7/9
Add the reserved 1 1/2 cups sautéed corn to the food processor. Process for another 30 seconds until the corn is partly blended into the dip.
Step 8/9
Transfer the whipped dip to a serving bowl and fold in the roasted pepper-shallot mixture. Fold in the fresh basil.
Step 9/9
Top the dip with the remaining corn and scallion mixture. Drizzle with hot honey and serve warm with chips or vegetables.
