Preparation Steps
Step 1/18
Preheat the oven to 110°C / 230°F and line the baking sheet with parchment paper.
Step 2/18
Add 1 tablespoon of cornstarch or powdered sugar to the lined baking sheet to lightly prevent sticking.
Step 3/18
Place 120 ml reduced aquafaba and 1 teaspoon cream of tartar in a very clean mixing bowl.
Step 4/18
Whip the aquafaba mixture until it forms firm, glossy peaks.
Step 5/18
Gradually add 200 g granulated sugar while continuously whipping the meringue.
Step 6/18
Fold 1 tablespoon cornstarch gently into the whipped meringue using a rubber spatula.
Step 7/18
Pipe or spoon the meringue into 6 nest-shaped pavlovas on the prepared baking sheet.
Step 8/18
Bake the meringue nests at 110°C / 230°F for 105 minutes.
Step 9/18
Remove the baked pavlovas from the oven and let them rest for 30 minutes before handling.
Step 10/18
Cut 5 passion fruits in half and scoop the juice into a bowl, reserving the pulp and seeds separately.
Step 11/18
Melt 50 g vegan butter in a saucepan over low heat.
Step 12/18
Add 100 g granulated sugar and the passion fruit juice, then stir until the sugar dissolves.
Step 13/18
Whisk 1 tablespoon cornstarch with 2 tablespoons water until smooth.
Step 14/18
Whisk the cornstarch slurry into the hot passion fruit mixture until the jelly thickens.
Step 15/18
Remove the passion fruit jelly from the heat and stir in the reserved passion fruit pulp.
Step 16/18
Let the passion fruit jelly cool to room temperature before assembling.
Step 17/18
Top each cooled pavlova nest with passion fruit jelly and a spoonful of vegan whipped cream.
Step 18/18
Serve the assembled vegan passion fruit pavlovas immediately.
