Preparation Steps
Step 1/9
Wash the eggplant, zucchini, cherry tomatoes, and rosemary. Slice the eggplant and zucchini lengthwise into thin, even strips.
Step 2/9
Heat 2 tablespoons of olive oil in the frying pan over medium-high heat. Pan-sear the eggplant strips in batches until golden and tender, about 3 to 4 minutes per side.
Step 3/9
Transfer the cooked eggplant to a plate and season it with a pinch of salt and black pepper. Pan-sear the zucchini strips in the same pan until golden and tender, about 2 to 3 minutes per side.
Step 4/9
Place the burrata in a bowl or on a plate and crush it gently with a spoon. Season the burrata with the remaining olive oil, salt, black pepper, and za'atar.
Step 5/9
Add the cherry tomatoes and rosemary to the frying pan. Cook them in the remaining pan oil for 2 minutes over medium heat.
Step 6/9
Pour the tomato sauce and honey into the pan. Simmer the sauce for 10 minutes, stirring occasionally, until slightly thickened.
Step 7/9
Spread half of the warm tomato sauce onto each serving plate. Arrange one layer of eggplant strips over the sauce.
Step 8/9
Add a layer of seasoned burrata over the eggplant. Top with zucchini strips and repeat the layers to form two vegetable mille-feuilles.
Step 9/9
Spoon the cherry tomatoes and remaining tomato sauce around the mille-feuilles. Serve immediately while the vegetables are warm and the burrata is creamy.
