Preparation Steps
Step 1/15
Peel the 4 boiled potatoes and mash them until mostly smooth.
Step 2/15
Finely chop the garlic and fresh coriander; divide the curry leaves into two equal portions.
Step 3/15
Heat 1 tablespoon vegetable oil in a frying pan over medium heat and add 1 teaspoon mustard seeds.
Step 4/15
When the mustard seeds crackle, add asafoetida, chopped garlic, and half of the curry leaves; sauté for 1 minute.
Step 5/15
Add the ground coriander seeds and ground turmeric, then stir for 30 seconds until fragrant.
Step 6/15
Add the mashed potato and salt, then mix well until the spices evenly coat the potato.
Step 7/15
Stir in the fresh coriander and remaining curry leaves, then squeeze in the juice from 1/2 lemon.
Step 8/15
Cook the filling for 2 minutes, then transfer it to a mixing bowl and let it cool slightly.
Step 9/15
Trim the crusts from the bread slices and flatten each slice with a rolling pin or clean flat-bottomed bowl.
Step 10/15
Spread about 1 tablespoon garlic chutney and 1 tablespoon green chutney over each flattened bread slice.
Step 11/15
Place about 2 tablespoons potato filling and 25 g cheese in the center of each bread slice.
Step 12/15
Roll each bread slice tightly around the filling and brush the edge with water to seal it.
Step 13/15
Preheat the sandwich press and place the sealed cheesy vada pav bites inside.
Step 14/15
Toast the bites for 4 to 5 minutes until golden and the cheese has melted.
Step 15/15
Serve the cheesy vada pav bites hot with any remaining garlic chutney and green chutney.
