Preparation Steps
Step 1/12
Peel and grate 100 g of carrot and 100 g of red cabbage using a box grater.
Step 2/12
Finely shred 100 g of Napa cabbage with a chef's knife.
Step 3/12
Finely chop the fresh mint, fresh parsley, and fresh chives.
Step 4/12
Combine the grated vegetables, shredded Napa cabbage, and chopped herbs in a large mixing bowl.

Pour water into a shallow plate and cover the rolling surface with a lightly damp clean kitchen towel.
Step 6/12
Dip one rice paper sheet in the water until flexible, about 5 to 10 seconds.
Step 7/12
Place the softened rice paper sheet on the damp towel and add a small handful of vegetable filling just above its center.

Fold the bottom edge over the filling, then fold both sides inward.
Step 9/12
Roll tightly from the bottom into a compact spring roll, then repeat with the remaining sheets and filling.

Squeeze half a lime to collect 1 tablespoon of lime juice.
Step 11/12
Mix sweet soy sauce, fish sauce, satay sauce, lime juice, and sriracha in a small bowl until smooth.

Serve the fresh spring rolls immediately with the spicy satay dipping sauce.
