Preparation Steps
Step 1/14
Peel the carrot and grate it into thin julienne-style strips.
Step 2/14
Slice the red cabbage and both Chioggia beets into very thin matchsticks.
Step 3/14
Finely chop the fresh mint, fresh parsley, and fresh cilantro.
Step 4/14
Combine all sliced vegetables and chopped herbs in the large mixing bowl.
Step 5/14
Pour enough water into the shallow plate to submerge one rice paper sheet.
Step 6/14
Cover the cutting board with the clean kitchen towel and lightly moisten the towel.
Step 7/14
Dip one rice paper sheet in the water until flexible, then lay it flat on the damp towel.
Step 8/14
Place a small handful of vegetable-herb filling just above the center of the softened rice paper.
Step 9/14
Fold the bottom edge over the filling, then fold both sides inward.
Step 10/14
Add a few thin vegetable or herb pieces near the wrapper edge for decoration, if desired.
Step 11/14
Roll tightly from the bottom to form one sealed spring roll, then repeat with the remaining wrappers and filling.
Step 12/14
Stir the peanut butter with 2 tablespoons of warm water until smooth and loosened.
Step 13/14
Mix in soy sauce, fresh lime juice, grated garlic, and grated fresh ginger until the dipping sauce is smooth.
Step 14/14
Serve the fresh vegetable spring rolls immediately with the peanut lime dipping sauce.
