Preparation Steps
Step 1/9
Grate the zucchini and yellow onion into a mixing bowl; sprinkle with salt and rest for 10 minutes.
Step 2/9
Wrap the grated vegetables in a clean kitchen towel; squeeze out as much liquid as possible.
Step 3/9
Chop the fresh basil; return the drained vegetables to the mixing bowl.
Step 4/9
Add the egg, wheat flour, za'atar, fresh basil, and 1 tablespoon olive oil; stir into a thick batter.
Step 5/9
Heat the stainless steel frying pan on the stovetop for about 6 minutes; add the remaining olive oil when water droplets bead in the pan.
Step 6/9
Spoon four small portions of batter into the hot pan; flatten them gently with a spatula.
Step 7/9
Cook the fritters until golden underneath, about 3 minutes; turn and cook the second side for about 3 minutes.
Step 8/9
Blend feta cheese, fromage blanc, water, rosemary honey, lemon juice, salt, and black pepper until smooth.
Step 9/9
Serve the warm zucchini fritters; dip them into the whipped feta sauce.
