Preparation Steps
Step 1/9
Preheat the oven to 175°C (350°F) and grease the cake pan.
Step 2/9
Melt the unsalted butter in the saucepan until it turns hazelnut-brown and smells toasted. Strain it and set aside to cool slightly.
Step 3/9
Melt the white chocolate and let it cool until just warm.
Step 4/9
Whisk the 3 large eggs with the granulated sugar until pale and foamy.
Step 5/9
Add the melted white chocolate and brown butter to the egg mixture. Whisk until smooth.
Step 6/9
Sift the wheat flour, unsweetened cocoa powder, and baking powder into the batter. Add the salt and mixed spices.
Step 7/9
Fold the dry ingredients in gently until no dry streaks remain. Stir in the milk only if the batter is noticeably too thick.
Step 8/9
Pour the batter into the greased cake pan. Bake for 30 to 35 minutes, until a tester comes out with a few moist crumbs.
Step 9/9
Cool the cake in the pan briefly. Transfer it to the cooling rack and cool completely before serving.
