Preparation Steps

Rinse the glutinous rice in cold water until the water runs mostly clear.

Soak the rinsed glutinous rice in plenty of cold water for at least 2 hours, preferably overnight.

Drain the soaked glutinous rice thoroughly.

Cook the drained glutinous rice with 500 ml water over low heat until tender and sticky, about 20 minutes.

Warm 300 ml coconut milk with the brown sugar and half the salt over low heat until the sugar dissolves.

Pour the sweetened coconut milk over the cooked rice and stir gently to combine.

Cover the coconut rice and let it rest for 15 minutes so it absorbs the coconut milk.

Whisk the cornstarch with 2 tablespoons cold water until smooth.

Heat the remaining 100 ml coconut milk with the remaining salt until gently simmering.

Stir the cornstarch slurry into the simmering coconut milk until the sauce thickens, about 1 minute.

Peel the ripe mangoes and slice the flesh into thin pieces.

Divide the coconut sticky rice among 4 serving bowls and arrange mango slices alongside.

Drizzle each serving with the thickened coconut sauce and serve warm or at room temperature.
